Taco Soup?!

It has started – finally!

The European championship of soccer in France has begun. Every day there are matches and, no matter which team you prefer, it’s essential to watch the match together with some friends because as you know soccer connects people and releases big emotions.

But what is a big sports event without some tasty food?

There is often such a big crowd of people who act like wild animals if they don’t get any food! So it’s very difficult to feed the herd without having too much stress. Here’s an idea to solve the food problem.

This recipe is easy to cook and ideal for a bigger group of people. And of course it is delicious, so nobody will be hungry afterwards. The taco soup from the US is similar to our “Chili con Carne” and there’s something for everybody. It has this name because there are all the typical ingredients of an original taco in it.

A good friend who studies at the University of Illinois sent this recipe to me. He does track - and - field like me, so we got to know each other while training together in Munich. When he went back to America, he ate this soup at the super bowl party for the first time. (You can compare the popularity of football in the USA with soccer in our country.) As you see, it is often eaten when watching sport events and also by sportsmen like the track- team of my friend, so it’s also healthy.

So don’t think too long and get ready to cook – for a wonderful soccer evening!

Yield:

About 6 servings

Ingredients:

  • 500g ground beef

  • 1 medium yellow onion chopped

  • 2 cloves garlic, minced

  • 1 jalapeno, seeded and finely chopped

  • 2 (14.5 oz) cans Rotel (diced tomatoes)

  • 400ml beef broth

  • 1 packet taco seasoning mix (tbsp. chili powder, ground cumin, ground paprika, dried oregano)

  • 1 packet dry ranch dressing mix (optional)

  • Salt and freshly ground black pepper

  • 1 can corn

  • 2 cans red kidney beans, drained and rinsed (or beans of choice)

Directions:

Cook ground beef with chopped onion, crumbling and stirring until browned and add jalapeno and garlic during last few minutes of browning.

Stir in diced tomatoes, beef broth, the spices and ranch dressing mix and season with salt and pepper.

Cover pot with lid and simmer for 30 minutes.

Add in corn and the beans and cook until heated through for about another half an hour.

Ready for serving!

Vegetarian? No problem:

But you can also change some things. You can use for example quinoa instead of the ground beef if you are a vegetarian. Or you use some other kind of meat.

Serious: Don’t forget to drain and rinse the beans! I mention this because it was a big mistake by myself by cooking the soup for the first time.

One tip at the end: A typical American would eat the soup together with some taco chips and cheese, but this is up to you.
