Anzac Biscuits - Welcome to Cookie Paradise!

"Our supplies are getting cut off – Turks have complete command of the roads through which we have to bring them – tonight we are to take the Ridge. I wonder how I shall get on in a charge, for I have not the least idea how to use a bayonet..."

In WW I the government of Australia and New Zealand had difficulties to afford the high costs of warfare. That's why women on the home front decided to tackle the problem:

They made up a delicious recipe to raise funds for their husbands in war.

The ANZAC cookie was born!

Until today ANZAC cookies are a symbol of national pride and solidarity between Australia and New Zealand. They are traditionally baked and eaten for celebrating Anzac Day on 25th of April. It's a day of remembering the day when the ANZAC landed at Gallipoli.

After only half an hour, you can enjoy yourself in cookie paradise!!!

But how do you get there? We'll show you how. To make 24 biscuits, you need: 75g rolled oats 100g plain flour 120g brown sugar 50g desiccated coconut 125g butter 2 tablespoons golden syrup 1/2 teaspoon bicarbonate of soda

Preperation time: 20 minutes

Cooking time: 15 minutes

Method: Preheat oven to 160°C. Line 3 baking trays with baking paper. Put oats, flour, sugar and coconut in a bowl. Add butter, syrup and two tablespoons cold water in a cooking pot over medium heat. Stir 1-2 minutes until butter has melted. Then, add bicarbonate of soda. Now, mix both, the butter mixture and the oat mixture together. Roll level tablespoons of mixture into balls. Place on trays, about 5cm apart and flatten them slightly. Bake for 10 to 12 minutes until they turn to a light golden (if you want them to be crispy, bake for 15 minutes). Stand on trays for 5 minutes. Serve!
